We showcase verjus in this drink to give an almost Champagne-like nature, helping it to open up the natural sweetness in citrus, and also drive the liquorice and floral notes found in our Old World Tonic.

Ingredients

• 50ml / 1 ¾ oz Premium Vodka
• 15ml / ½ oz Verjus
• 15ml / ½ oz Fresh Lemon Juice
• Dash Peychaud's Bitters
• Topped with East Imperial Old World Tonic
• Orange Zest
• Single Fresh Grape

Method

1. Add all ingredients except tonic to a shaker tin, pack with ice and shake hard for 10 seconds
2. Fine strain into chilled coupette and top with Old World Tonic
3. Garnish with a single grape and and orange zest
